Here are the files for the document describing how to modify the ABS wiring so that it can be switched on and off at will. The most common use for this is to disable ABS initialisation when you start the bike, so that a weak battery no longer causes your ABS to malfunction. But I understand from various people that if you fit a switch, you can switch the ABS on and off without having to switch the engine off and hold the ABS switch down first. You probably can't switch the ABS on whilst moving, but as long as you're stopped, with the engine running, it should fire up without a problem.
